Fresh-Frozen Sea Urchin Seafood

Sea urchins opened across the top and left in the half shell. The spines are a dense purple-black, and set into the five panels inside is a full band of roe — a rich orange-yellow laid in thick tongues with a soft matte surface, meeting the shell with no gaps. Each one is opened clean, with the dark membrane pushed back clear of the roe.

Roe like this is eaten as close to raw as possible: straight from the shell with a spoon and a squeeze of lemon, laid over warm rice, or folded through pasta at the last moment. Keep it brief — heat turns the roe grainy. If you are not eating them straight away, keep them cold and covered.
